Mexican Chocolate Cutouts recipe from Diabetic Living -- these have a touch of chili pepper for a complex chocolate taste. The Splenda version is apparently 10 calories, and 2 g carb, fewer per cookie than the sugar version.

This appears to be the recipe I used for the gluten-free Sugar Cookies I did for World Diabetes Day. Like many of the commenters, I had to add a lot of additional gluten-free "flour" to the process.

Peanut Butter Cookies from Better Homes and Gardens New Cook Book, 12th Edition (Des Moines, 2003) ISBN 978-0-470-59136-9 p. 218. I substituted Trader Joe's Peanut Flour for the 1 1/4 c all-purpose flour in a one-to-one ratio. The cookies were a bit dry/crumbly to form, and very soft and crumbly until completely cool. Yield in 1" balls (as described in recipe) turns out to be about 70 (rather than the 36 listed in the recipe. I'm not certain yet, but think I can make this dairy-free (though not egg-free) by substituting 1 lb peanut butter for the 1/2 c butter and 1 c of the flour. Or I might try Trader Joe's peanut butter cookie recipe as-is...
